So who doesnt like Chinese takeaway? This healthy option is quicker to make at home and is ready on the table in around 30 minutes.

Ingredients
- 1 tbsp Sesame Oil
- 1 Onion–Chopped Finely
- 3 cloves Garlic–Minced
- 1 inch Piece of Fresh Ginger- Grated
- 2 Small Carrots-Grated
- 500 g Pork Mince
- 3 tsp Chinese Five Spice
- 2 tbsp Dark Soy Sauce
- 2 tbsp Light Soy Sauce
To Serve
- 3 Spring Onion Chopped
- 2 Red Chillies (add more or less depending on your taste)
- 2-3 Little Gem Lettuce

Instructions
- Firstly prepare your vegetables: Chop onion. Peel and crush garlic.Peel and grate carrots. Peel and chop Ginger.
- Heat half the oil in large open wok, fry the pork mince until browned. Then remove from pan and stand to the side.
- Add the rest of the oil to the pan and fry onion, garlic and ginger for around three minutes until soft.
- Add carrots, fry for a further five minutes.
- Put pork back in the frying pan, add in five spice, dark and light soy sauce
- Cook on a low heat for 10-15 minutes, until the mixture is browned and the sauce has thickened slightly.
- Serve in little gem lettuce leaves, and top with chopped spring onions and chillies.

This flavourful dish is really healthy and can be used as part of the slimming world diet. Swap mince pork for turkey and serve with rice as an alternative. Mushrooms and water chestnuts can also be added at the same stage as the carrots. This impressive dish is easy to make and will be a welcome addition to this family’s meal planner.
