Fancied something a bit different this Saturday lunchtime so decided for this speedy Italian hunger buster. Not really a big fan of pasta to be honest but absolutely adore prawns, spotted the bottle of Italian beer in my local supermarket so there came my inspiration.
INGREDIENTS
- 350g Spaghetti
- 2 tbsp Olive oil
- 4 tbsp Basil Pesto
- 20 Large peeled prawns, deveined
- Salt
- Black pepper
- 8 cherry tomatoes, halved
- 1 tbsp Lemon juice
- 2 heaped tbsp Flat-leaf parsley, roughly chopped
- Red chilli de-seeded and finely chopped
- Parmesan cheese finely grated to garnish
METHOD
- In a large pan of boiling, salted water, cook the pasta until al dente
- Meanwhile, heat the olive oil in a large non-stick frying pan over a fairly high heat
- Add the Pesto and fry briefly before adding the prawns
- Sautè for 1-2 minutes, until the prawns have turned pink, then season and add lemon juice
- Add the halved tomatoes and a pinch of the finely chopped chilli
- Remove from heat, add drained pasta and sprinkle with parsley, chilli and parmesan.
Around 20 mins to make this speedy lunch time treat served with olive bread and an ice cold Menabrea Italian blond beer. Enjoy.
